Turkey Meatballs with Marinara over Spaghetti Squash

The kids have been asking for meatballs for some time now. Tonight I made Italian-style turkey meatballs and mixed them in my meaty marinara sauce (sans the meat). I served this over roasted spaghetti squash.


Turkey Meatballs
 (Makes approximately 20)

1 lb. ground turkey (grass-fed beef can also be substituted)
1 egg, beaten
1/4 cup almond flour
1 tbs Italian seasoning
1 tsp garlic powder
1 tsp onion powder
1/2 tsp sea salt
1/2 tsp pepper
Olive or coconut oil (for brushing)

Preheat oven to 400
Place prepared spaghetti squash in oven for 40 minutes

In a large bowl, combine all ingredients except oil
Roll tbs sized balls out of the mixture
Place on a baking sheet
Brush a little olive or melted coconut oil over the tops
Place in oven with spaghetti squash during last 25 minutes
(While these bake, make the marinara sauce)

When meatballs are finished, take out of oven and place in the marinara sauce
Let them simmer here for 5 minutes
While simmering, use a fork and shred spaghetti squash into a bowl

Place portions of squash in individual bowls
Spoon sauce with meatballs on top
Serve

    1. My phone garbled what I was trying to say!! Lol. Those look great though, wish my littles would eat spaghetti squash.

      Do they like zucchini noodles??
      If not, I'm working on something else that they might love. ;)
