Hot wings
(I used extra virgin olive oil and Frank's Red Hot Sauce, and it made enough sauce for 5 pounds of wings.)

Garlic and Herb Wings
(I also par-boiled these wings first like the directions in the hot wings recipe. This step is not necessary for either, but it does make them crispier.)
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon ground cumin
1 teaspoon kosher or sea salt
3 pounds chicken wings
3 tablespoons extra-virgin olive oil
2 tablespoons fresh rosemary, chopped
2 garlic cloves, finely minced
1/2 teaspoon sea salt

1 teaspoon dried oregano

1/2 teaspoon ground cumin
1 teaspoon kosher or sea salt
3 pounds chicken wings
3 tablespoons extra-virgin olive oil
2 tablespoons fresh rosemary, chopped
2 garlic cloves, finely minced
1/2 teaspoon sea salt
Preheat oven to 450.
In a small bowl, mix together the oregano, rosemary, cumin and salt.
Lay the chicken wings on a baking sheet and season the chicken wings with this mixture.
Bake the chicken wings for 30 minutes.
While the chicken is baking, mix together the oil, basil, garlic, and sea salt.
After 30 minutes, spread the garlic/oil mixture on top ( I use a silicone pastry brush.)
Flip and spread mixture on the other side the wings
Cook 10 minutes more.
