Rosemary and Garlic Chicken Thighs


Tonight was an easy dinner night again. These chicken thighs only take 25 minutes in the oven. I steamed some frozen veggies and added on some more of the lemony romaine hearts that I made last week (recipe here). This is a great dinner and can easily be changed up with a couple options I will list below.

Rosemary and Garlic Chicken Thighs
(Serves 4)

8 boneless, skinless, chicken thighs
1 tbs olive oil
1.5 tbs chopped fresh rosemary
2 garlic cloves, minced
1/2 tsp sea salt
1/2 tsp pepper

Preheat oven to 400
Lay chicken thighs in a baking dish
In another bowl, mix together the rest of the ingredients
Place the mixture on top of chicken thighs and rub in
Cook for 25 minutes

Options-
This dish is versatile.
1. To add in a lemon flavor, add in zest of one lemon to mixture.
2. For something else a little different, top the thighs with a few shakes of balsamic vinegar after they come out of the oven.
