This morning I wanted a frittata. It has all of my favorite breakfast foods in one dish and is easily interchangeable. The best part is that it is not too time consuming, and while it's in the oven, I have time to clean up and set the table. When it's finished, only our plates, utensils, and one skillet remain (love this). I had this alone, but added fruit on the side for everyone else.
Breakfast Frittata
(Serves 4-6)
Oven-safe skillet
2 tbs olive or coconut oil (divided)
2 cups chopped veggies
My favorites-
Onions
Bell peppers
Broccoli
Tomatoes
Spinach
2 Aidell's Chicken and Apple Sausage links, diced (or other breakfast meats)
8 whisked eggs
1 tsp black pepper
Preheat oven to 350
In an oven-safe skillet, saute' veggies in 1 tbs oil until they begin to soften (about 3 minutes)
Add in sausage to begin to heat through (about 3 more minutes)
Take veggies and sausages off heat and set aside
In a medium bowl, whisk eggs and pepper
Add veggies into the bowl and mix
In skillet, add other tbs oil
Turn to med-low heat
Add in egg and veggie mix to pan
Let set for 5 minutes
Transfer skillet to oven
Bake for 18 minutes or until golden brown on top and eggs are cooked through
Slice and enjoy
I like to top this with Tabasco or sugar-free salsa.
