Frozen veggies to steam
Salad
Roasted veggies (carrots, broccoli, asparagus, etc.)
Preheat oven to 400 degrees
Mix veggies with olive oil, salt and pepper
Roast 40 mins or so
Roasted brussel sprouts
Preheat oven to 400 degrees
Cut off the bottoms of the brussel sprouts
Toss brussel sprouts with olive oil, sea salt, pepper, and garlic powder
Roast on a baking sheet or casserole dish for 35-40 minutes
Top with extra sea salt immediately after roasting

Cut off bottoms where they naturally bend
Wrap with plastic wrap
Microwave for 3 mins
Place in bowl and top with olive oil, juice of one lemon, salt and pepper (toss)
Favorite sautéed veggies in pan with olive or coconut oil
Baked sweet potatoes
Mashed sweet potatoes
After boiling peeled and cubed sweet potatoes for approximately 20 minutes, mash them and add in canned coconut milk and cinnamon until desired creaminess and taste are reached.
Roasted sweet potatoes/ butternut squash, etc.
Preheat oven to 400 degrees
Use whatever kind of root veggies you have (sweet potatoes, butternut squash, turnips, rutabegas, etc.)
Cut as many in 1 inch cube pieces that will fit in one single layer on your baking sheet
Finely chop about 1/4 cup of your favorite fresh herbs (I love rosemary, lemon thyme, oregano, dill, and tarragon)
Drizzle extra virgin olive oil on top of root veggies
Add approximately 1/2 tablespoon each of sea salt and cracked black pepper and 1 tablespoon garlic powder over the top
Sprinkle on the fresh herbs
Toss to coat everything
Roast for 25 minutes
Stir
Roast for 30-35 minutes more until they are golden brown and becoming crisp on the outside
Raw veggies
Mashed Plantains
4 plantains
Sliced and sauteed with coconut or olive oil and cinnamon
Place in food processor with 4 TBS coconut milk
Process until smooth
