Egg scramble with veggies and chicken and apple sausage (or other approved breakfast meats)
Sauté onions, green peppers, tomatoes, and broccoli with olive or coconut oil
Add cut up chicken and apple sausage until heated through
Throw in handful of spinach and begin to wilt
Turn heat to low so eggs don't burn
Whisk eggs (I normally use three) with salt and pepper and add over veggie/sausage mix
Turn heat up and scramble
I will sometimes just heat up the chicken and apple sausage in the microwave and have that on the side instead of in the scramble. The veggies can be switched for whatever your favorites are. I like to eat this with Tabasco or approved salsa. You can also double this and heat the rest up for the next morning's meal.
Breakfast Casserole (to be heated up and enjoyed all week long for a quick meal)
1 pound approved ground turkey, chicken or pork breakfast sausage (may also substitute ground beef or chicken and apple sausage that's been chopped)
1 Tbs olive or coconut oil
1 bell pepper, chopped
1 onion, chopped
10 grapes tomatoes, sliced
1/4 cup broccoli, chopped
1/2 cup baby spinach
(Substitute any veggies you want)
Salt
Pepper
1 cup approved unsweetened almond milk
8 eggs, beaten
Brown meat (except for chicken sausage -it's pre-cooked)
Add olive oil
Add in veggies and saute'
Let the mix cool
In another bowl, mix eggs, almond milk and salt and pepper
Place cooled sausage and veggies in baking dish
Pour egg mix over and mix in
Cover and refrigerate overnight then cook in preheated 350 oven for an hour and 20 minutes or so until eggs are cooked through and top is golden brown or cook immediately at 350 preheated oven for 1hr or so until eggs are cooked and top is golden brown.
I cooked this in an 8x8 glass dish. I have also made this in a 9x12 glass dish by adding an additional 4 eggs.
Mini Egg Muffins
Preheat oven to 400 degrees
Use coconut or olive oil and thoroughly grease 30 mini muffin tins
Chop your veggies and place in tins
Whisk 8 eggs with salt and pepper (I usually do this in a pitcher for easy handling.)
Pour over veggies
Stir in
Bake 18 minutes
Good in fridge for up to 4 days
Take out, heat up and eat
