I love French toast. I think it's mostly the warm, cinnamon taste. I am still doing the 21 DSD with Whole30 food rules, and I found a way to make it happen. I made Civilized Caveman's Paleo Banana Bread last night so that I could create French toast this morning. I'm not sure if you've made it yet, but if not, and you like banana bread, you must make this. My favorite part about it is that it only uses bananas as a sweetener. It is fantastic on its own, but is amazing when used as French toast. Since the bread is already sweet, it doesn't need any syrup or other toppings (but my family did put strawberries on top of theirs just because). Yes, he has his own French toast recipe using this bread that you can get to from his page (and I've made that version before), but I like my French toast a little different. I like mine with a hint of vanilla and with more spices (ginger, cloves, nutmeg, extra cinnamon). To keep this bread on (my) plan, I used green-tipped bananas and coconut oil in place of the butter.
If you're not a fan of banana bread, you can still use this French toast recipe with other grain-free breads. I will provide a list of a few that should work. These won't have the sweetness of his bread, but you can add fruit on top or some maple syrup if needed. Whichever bread you choose, I highly recommend that you bake it the night before so breakfast can quickly get on the table.

(Serves 4-6)
1 loaf grain-free bread (sliced into 16 pieces)
4 eggs, beaten
1/4 cup unsweetened almond milk
1 TSP vanilla
1 TBS cinnamon
1 TSP ginger
1/2 TSP nutmeg
1/2 TSP ground cloves
*optional-if you are using sweeteners and prefer a sweeter batter, you can add 1-2 TBS pure maple syrup to the mix
Directions
Turn oven on 200 degrees to keep slices warm while cooking
In a bowl, add in eggs, milk, vanilla, and spices
Whisk all together
In a pan, melt some coconut oil on med-high heat
Take a slice of the bread, dip it into the egg mix
Flip the slice over and make sure entire slice is covered
Put the slice into the greased, heated pan
Quickly repeat with more slices until the pan runs out of room
Set timer for 2.5 minutes
Flip
Set timer for 2 more minutes
Take slices out and place on pan in the warm oven
Add in more oil before the next round
When all slices are finished, take out of the oven and enjoy
Eat as is or add fruit and/or pure maple syrup on top
Which bread is easiest to make? I don't have a bread maker and my bread always seems dense. :)
ReplyDeleteDefinitely no need for a bread maker...all you need is a loaf pan. I use the Pampered Chef stoneware loaf pan (I bet you have this in one of your cabinets) .
DeleteAlmond flour/coconut flour/grain-free breads are dense on their own, but some are softer than others. We liked the Scrumptious Sandwich Bread from Elana's Pantry (you can find almost that exact recipe here from the Jen's Gone Paleo link). I substituted olive oil for the grapeseed. I think hers is softer because she whips the almond butter (there's something to be said for that). It's not hard to make either. The loaf is small, but it works very well. :)
