Asian Turkey Stir Fry
(Serves 4-6)
1 TBS sesame oil
1 pound ground turkey
Salt and pepper
1 small head of cauliflower, stem discarded and processed into "rice"
1 onion, chopped
1 bell pepper, chopped
2 large carrots, grated
2 garlic cloves, minced
1 tsp fresh ginger, grated
2 TBS coconut aminos
1 tsp fish sauce
Magic Asian Sauce (recipe below)
Cilantro and/or green onions for garnish
Choose your preference for serving-Romaine hearts (for boats), Bibb/Butter lettuce leaves (for lettuce wraps), Chopped butter lettuce (for a chopped Asian salad), or Corn tortillas (if you prefer traditional "tacos")
4 TBS coconut aminos
1 tsp fish sauce
2 tsp rice vinegar
2 tsp sesame oil
1 clove of garlic, minced
2 TBS almond butter
1 TBS honey (or date paste if on W30)
1/4 tsp red pepper flakes
Black pepper
Whisk all ingredients until smooth
In your pan, add in the sesame oil and turn to med high heat
Place turkey in the pan along with some salt and pepper
Brown the turkey
While the turkey cooks, prep your cauliflower "rice", chop your veggies, and make the magic Asian sauce
When turkey is done, scoot it all over to one side of the pan
On the other side, drop in your onion, bell pepper, carrots, garlic, ginger, coconut aminos, and fish sauce
Cook these together until the veggies are soft
When veggies are done, combine the turkey and veggies together
Add in your cauliflower "rice"
Stir
Add in the magic Asian sauce
Stir everything together thoroughly
Allow this to all heat together for one minute more
Garnish with cilantro and/or green onions
Using your preference, serve as lettuce boats, lettuce wraps, a chopped salad, or tacos in corn tortillas (or just dig in with a spoon)
*Sometimes I steam the cauliflower rice separately and add the meat mixture on top so it's softer. It depends on what you prefer. :)
