Cajun Salmon with Warm Mango and Vegetable Salsa
(Serves 4)
Salmon-
2 TBS coconut oil (or other oil of choice)
4 salmon fillets
Cajun seasoning (to your liking)
Salsa-
2 tsp coconut or other oil
1/4 cup onion, diced
1/4 cup bell pepper, diced
Handful cherry or grape tomatoes, diced
1 serrano or jalepeno, seeded and diced*
Juice of 1 lime
1 mango, peeled and diced
TBS cilantro, chopped
Salt and Pepper
In a small pan over medium heat, melt coconut oil for the salsa
Add in onion, bell pepper, tomatoes, serrano, and some salt and pepper
Let this start to cook down and become soft
Meanwhile, add in your 2 TBS coconut oil to another pan and turn heat to medium high
While that heats up, sprinkle the cajun seasoning on your salmon fillets
Place the salmon in the pan, while leaving some room (might want to do this in two batches)
Set your timer for 4-5 minutes, depending on the size (mine were approx. 2 inches thick..took 5 minutes)
After the 5 minutes, there should be a brown crust on the salmon
Flip and cook for an additional 2-3 minutes
While the salmon cooks, go back to your salsa
Once veggies are all softened, add in the juice of your lime and stir around
Let this continue cooking until the juices from the lime are all soaked into the veggies
Turn off the heat
Add in your mango and cilantro and stir around
Once your salmon is finished, plate it and top the it with the salsa
*The serrano adds heat to the salsa. If you do not want the salsa spicy (or if your kids do not like spicy foods), just omit it altogether. If you love spicy foods, leave the seeds in with it.
