Grain-Free Granola/ Cereal
1/2 cup coconut oil, melted
1/2 cup honey, warmed
1 tbs vanilla extract
1 cup sliced raw almonds
1/2 cup raw pumpkin seeds
1/2 cup raw sunflower seeds
1 cup unsweetened shredded coconut
1 cup almond meal
1 cup raisins
8 chopped pitted dates
1 tbs cinnamon
Preheat oven to 325
Combine dry ingredients in a large bowl
Combine wet ingredients in a small bowl
Mix wet into dry
Dump on a thin baking sheet with a lip
Bake 10 minutes
Stir
Bake another 10 minutes
Stir
Bake 5 minutes more
Stir and be sure it's golden brown.
If so, set out to cool. If not, allow to cook 5 minutes more or so until you see this happen. It will become crunchy as it cools.
After cooled, break apart and store in an airtight container.
Eat this as a "granola" snack or top it with almond milk and eat as a "cereal".
**You can also form these into balls or bars while it's still warm for a more portable snack.**
