Chicken, Berries, and Apples over Spinach with Homemade Lemon Ricotta, Poached Egg, and a Honey-Lime Vinaigrette
I went to a local restaurant about a year ago and ordered a fantastic salad. It had berries and a whipped lemon ricotta with a poached egg and a honey vinaigrette dressing. It seems odd that all of this would go together, but once mixed, it was perfect. The next time I went to this restaurant, the menu had changed and this salad was no longer on there. I decided to recreate this salad at home and add in some of my own extras. I hope you give it a try. :)
Chicken, Berries, and Apples over Spinach with Homemade Lemon Ricotta, Poached Egg, and a Honey-Lime Vinaigrette
2 cups baby spinach leaves
Sliced leftover grilled chicken breast
1/2 granny smith apple, sliced
1/4 cup mixed fresh blueberries and blackberries
1 tablespoon homemade lemon ricotta
1 poached egg
Honey-lime vinaigrette dressing
Top spinach with chicken slices
Scatter the berries and apples on top
Place ricotta in the middle
Add poached egg next to the ricotta
Drizzle with vinaigrette
When you eat this, break the egg and mix it in with the ricotta and dressing. It's divine!
Homemade Lemon Ricotta
I used this recipe for ricotta cheese
I then added in the zest and juice of 2 lemons
Mix well
Honey-Lime Vinaigrette
I used this recipe, but I swapped the canola for only olive oil
